Have you eaten cutlets made not from meat, but from walnuts? If not, be sure to cook this dish. Walnut cutlets are not only incredibly tasty, but also extremely useful for the brain and blood. Here is another recipe with potatoes:
Ingredients:
- 2 cups already peeled walnuts,
- two cloves of garlic,
- 5 potatoes,
- fine table salt,
- large onion
- 4 tablespoons of white flour,
- three eggs,
- Purified vegetable oil.
Cooking:
1. Scroll peeled raw potatoes through a meat grinder first. Also, using a meat grinder, you need to grind walnuts, peeled onions, and peeled garlic cloves into a mince-like mass.
2. Immediately, so that the ground raw potatoes do not darken, add chicken eggs and white flour to the minced meat. Salt minced meat. In addition to salt, you can also add spices from it. The dough of cutlets, already fully cooked, resembles the dough intended for pancakes in consistency.
3. Pour a sufficient amount of refined vegetable oil into the pan. Put it on the stove and wait until this oil is thoroughly hot.
4. Take a tablespoon. She takes a little cooked minced meat and put it in a pan. Cutlets made from walnuts are fried, just like meat cutlets.
Cutlets can be prepared not only from meat, fish or vegetables, but also from nuts. Such an exquisite dish as lean nut cutlets will be especially appreciated by vegetarians of various persuasions, fasting people and just gourmets. You can fast in different ways and to varying degrees, so it should be noted that the addition of such a product as cheese is still highly desirable. The production of cheese from milk does not threaten the lives of living beings, and cutlets with it will definitely turn out tastier.
We will tell you from walnuts, although, of course, you can use some other types of nuts, for example, hazelnuts or peanuts (which, strictly speaking, are not nuts).
Recipe for nut cutlets
Ingredients:
- walnut or peanut kernels - 1 cup;
- potatoes - 2-3 pcs. medium size;
- bread crumb - 200-300 g;
- some milk or water;
- hard cheese (optional) - about 100-150 g;
- sesame (optional) - 1 tbsp. a spoon;
- garlic - 1-2 cloves;
- dry ground spices (you can use different ready-made mixtures without glutamate, salt and preservatives, for example, curry or suneli hops);
- different fresh greens;
- vegetable oil or melted butter for frying;
- breadcrumbs.
Cooking
Lightly toast the nut kernels in a dry frying pan. Peanuts must be peeled and roasted a little longer than walnut kernels. We grind the nuts in a mill, not necessarily to the state of flour, it is better to the state of small cereals such as semolina, then the minced meat will have an interesting texture. Soak the bread crumb in water, or better - milk, then squeeze it slightly and knead it (with a fork or in a blender).
We cook potatoes “in uniform”, cool with cold water, peel and knead with a fork. We rub the cheese on a medium grater. Mix all ingredients in a bowl. Lightly salt. Add sesame seeds, spices and crushed garlic.
Next, we have two options. Since all prepared ingredients can be eaten without frying (as we remember, this type of heat treatment is unhealthy to say the least), we can add a little melted butter to the bowl and mix everything thoroughly. Form cutlets, roll in. And better - in nut flour and, without frying, put on a serving dish, decorating with herbs.
Well, if you want, you can fry on both sides in a frying pan in oil, or bake in the oven for 20-25 minutes at a temperature of about 200 degrees C. This makes especially sense if you decide not to fast and added to minced meat egg.
There is literally the other day a harvest of walnuts.
And on the eve of my shift, we cooked this delight - walnut cutlets, and I could hardly wait for the morning to enjoy this unpretentious dish again. But I was very unlucky - we had guests and all the cutlets went with a bang, like tangerines on New Year's Eve. So it remains only to lick and cook again.
And here is the cooking process itself, for which we you will need:
—2 cups walnuts;
- one large onion;
- 2-3 cloves of garlic;
- half a loaf;
- 3-4 medium potatoes.

Here they are, our nuts. I would eat them anyway - I really love them just like that, I would eat handfuls, but a lot of walnuts is not recommended - it is dangerous for health. In my opinion, no more than three walnuts are allowed per day. Or maybe I'm wrong? If so, please correct me, dear reader. So, I restrain myself from the temptation to eat nuts, because cutlets are also not averse to tasting.
We scroll the nuts through a meat grinder, and, as you noticed in the photo, a regular one, not an electric one.
For convenience, cut the onion into slices and grind them in a meat grinder.
The laid out mass of ground nuts on a dish looks very appetizing. But still I control myself to bring the process of preparing the long-awaited cutlets to its logical conclusion.
We grind the potatoes on a fine grater, although if there is no such desire, then you can skip through a meat grinder. Drain the resulting juice.
We pass the soaked loaf through the meat grinder, but if you want, you can just knead it with your hands.
We combine everything in one container, salt, pepper, add two eggs.
Squeeze out the garlic with the garlic and add to the total mass.
We knead the mince. You can put it in the refrigerator for half an hour. If suddenly the minced meat turns out to be liquid, just add a little ground crackers. The cutlets themselves are not rolled in flour or breadcrumbs.
We take a spoonful of minced meat, form a ball, flatten it and fry the resulting round cutlets in a small amount of vegetable oil over medium heat.
As you can see, dear friends, in appearance our cutlets resemble a steak. You can cook vegetable gravy for the cutlets themselves, but the cutlets flew away at such a speed that the gravy was not needed.
By the way, I was picking nuts with a knife, I was tired, so I decided to buy a nutcracker, period!

I really liked chicken cutlets with the addition of walnuts, the taste turned out so unusual, very pleasant, original. And also a reception with whipped protein in minced meat - cutlets came out juicy and lush. This technique can be safely used during the preparation of absolutely any cutlets.
