I prepare and measure all the necessary products. I take the butter out of the fridge to bring it to room temperature.
I separate the yolks from the whites. Beat egg whites with sugar in a separate deep bowl. To stable foam.
In a saucepan I mix cottage cheese, softened butter, egg yolks, vanilla sugar and warm milk (not hot). Mix until smooth (I beat with a mixer).
In principle, you can mix all the ingredients at once. But if you do it separately, then the casserole is more airy and tender.
Pour semolina into the curd mass, mix with a spoon until smooth (not with a mixer!).
I set it aside for 30 minutes. During this time, the semolina will swell.
Grease a baking sheet with butter and evenly sprinkle with breadcrumbs.
I spread the curd mass in it, level it with a spoon. I put in the oven preheated to 180 degrees for 40-45 minutes. I bake until golden brown. The top can be greased with yolk or sour cream. I did not grease, I have a crust and so it turned out very ruddy.

- Butter - 50 gr;
- Milk - 200 ml;
- Sour cream - 100 ml;
- Sugar - 3 table. spoons.
Peel and grate the carrots or cut into small strips. Put in a saucepan, pour in hot milk, add sugar and put a piece of butter. Simmer covered until done. Pass the cooked carrots through a blender. Transfer the resulting puree back to the pan and pour semolina. Boil for five minutes and add egg yolks, mix.
Mix the cottage cheese with sour cream, beat the whites in a separate bowl and add to the cottage cheese, mix. Put everything to the carrots and put the resulting mixture on a mold or baking sheet. Bake for half an hour at 180-200 degrees. You can add walnuts or dried fruits, pre-soaked and chopped, to the recipe. Or put chopped and peeled apples. Choose the green variety as it is less allergic.
1 The fat content of cottage cheese in this recipe is not important, I took 9% fat cottage cheese. We need to grate the cottage cheese well. You can grind the curd through a sieve, but I prefer the faster way, so I grind the curd with an immersion blender until smooth, creamy.
2 Mix cottage cheese with melted butter, semolina, sugar and egg yolk. Set aside the protein. If you look at the technological map, the preparation of a kindergarten casserole, it will be written there that the semolina must be steamed with hot water, and only after that, add to the curd. But, for me. this experiment was not successful, the semolina was brewed in a single lump and then did not want to be evenly distributed in the dough.

4 Steam the raisins in boiling water for 10 minutes to swell the raisins.
5 Gently fold the egg white into the batter using a spatula. Drain the raisins, put them on a sieve to remove excess water and add to the curd mass. We mix the mass well.
